2 1/2 c crushed butter flavored crackers (like RITZ) .
2 c hot water .
1/4 c milk .
2 cinnamon sticks .
1/8 tsp nutmeg .
1 lb pork sausage .
2 tbsps sugar .
1 small white onion, sliced .
2 eggs, lightly beaten .
Meatballs .
Sauce .
1/4 c brown sugar .
1 lb ground beef .
2 tsps lemon juice .
1 tsp salt .
1/2 tsp fresh minced ginger
Directions
Step #1 Place the apricots in a dish; pour the 2 c hot water over them to completely cover.
Step #2 Allow them to soak for at least 2 hrs or overnight.
Step #3 To make meatballs, preheat the oven to 375 degrees.
Step #4 In a bowl mix together all the meatball ingredients.
Step #5 Shape the mixture into 1 inch balls & put on an ungreased baking sheet.
Step #6 Bake for 25-30 mins, or until meatballs are browned.
Step #7 Put the cooked meatballs into a baking dish & hold to the side.
Step #8 While the meatballs are cooking place the apricots along with the water they have been soaking in, into a sauce pan.
Step #9 Add the two cinnamon sticks & bring to a boil.
Step #10 Lower the heat, cover & let simmer until the apricots are soft, about 15 mins.
Step #11 Remove the cinnamon sticks.
Step #12 Put the mixture (including the water the apricots are cooking in) into a mixer or food processor/blender, add the sugar & ginger & mix until smooth.
Step #13 (make sure you remove the center cap of the mixer since the sauce will be hot).
Step #14 Pour the apricot sauce over the meatballs & bake uncovered for 20 mins in a 350 degree oven.
