Featherlight Rolls Recipe

Ingredients
  • 1/3 c shortening .
  • 1 tbsp sugar .
  • 1 1/2 tsps salt .
  • 2 (1/4 oz) packages active dry yeast .
  • 1/2 c warm water (110-115 degrees F) .
  • 1/3 c sugar .
  • 1 c warm milk (110-115 degrees F) .
  • 4-5 c all-purpose flour .
  • 2 eggs

Directions
  • Step #1 Dissolve yeast in warm water; stir in the 1 tbsp sugar.
  • Step #2 Let stand 5 mins.
  • Step #3 Add milk, shortening, eggs, 3 c flour, salt, & 1/3 c sugar.
  • Step #4 Beat on medium speed for 2 mins.
  • Step #5 Stir in enough of the remaining flour to form a soft dough (will be sticky).
  • Step #6 Do not knead.
  • Step #7 Refrigerate, covered, overnight.
  • Step #8 Punch dough down & turn out onto a lightly floured surface.
  • Step #9 Cut into 24 equal portions.
  • Step #10 Cut each portion into thirds.
  • Step #11 Roll each third into a ball.
  • Step #12 Place three balls into each greased muffin c.
  • Step #13 Cover up & rise in a warm place until doubled, about 1 3/4 hrs.
  • Step #14 Heat oven to 350* F.
  • Step #15 Bake rolls for 13-15 mins or until golden brown.
  • Step #16 Remove from muffin tins to wire racks.
  • Step #17 Serve warm.
