Pan-broiled Steak With Whiskey Sauce Recipe

Ingredients
  • 1/2 tsp kosher salt .
  • 2 tbsps sliced onions .
  • 1/2 tsp dry mustard .
  • 4 steaks, sliced (1-inch thick) .
  • 2-3 garlic cloves, finely sliced .
  • 1 garlic clove, finely sliced .
  • WHISKEY SAUCE .
  • 2 tbsps whiskey (I like Jack Daniels) .
  • 1 tbsp worcestershire sauce .
  • 1 dash Tabasco sauce, if desired but recommended (optional) .
  • 1 tbsp black peppercorns, coarsely crushed .
  • 1/4 lb unsalted butter

Directions
  • Step #1 Trim away any excess fat from the steak or steaks.
  • Step #2 Press the crushed peppercorns & garlic onto both sides of the steak & let it stand at about room temp 1 hr.
  • Step #3 Heat a heavy iron skillet over high heat.
  • Step #4 Grease the skillet with a piece of the fat trimmed from the steak.
  • Step #5 Toss in about half the salt.
  • Step #6 Sear the steaks quickly on one side, then lift out; add the remaining salt to the skillet, turn the steak & sear the other side.
  • Step #7 Reduce the heat to moderate & cook the steaks as desired.
  • Step #8 Remove to a warmed platter.
  • Step #9 Make the sauce.
  • Step #10 Pour off fat from the skillet.
  • Step #11 Melt the butter in the skillet over low heat/flame.
  • Step #12 Add the onion & garlic & cook slowly until soft, stirring often.
  • Step #13 Add the remaining ingredients & let simmer for 1 to 2 mins.
  • Step #14 Pour over the steak or steaks & serve.
