Chipotle Sloppy Joes With Crunchy Coleslaw Recipe

Ingredients
  • black pepper, to taste .
  • 1/2 c tomato sauce .
  • 1/2 tsp ground cumin .
  • 1/4 tsp salt .
  • 1/2 c frozen corn .
  • 1/4 tsp hot pepper sauce .
  • 2 tsps cider vinegar .
  • 4 whole wheat hamburger buns, split .
  • 1 tbsp light mayonnaise .
  • 1/4 c fresh cilantro, sliced .
  • 1 1/2 c packaged coleslaw mix .
  • 1/2 c canned black beans, rinsed, drained .
  • 1/4 tsp black pepper .
  • 1/8 tsp salt .
  • 3/4 c ketchup .
  • 1-2 tsp chipotle chiles in adobo, minced .
  • 1/4 c plain nonfat yogurt .
  • 1 lb 95% lean ground beef .
  • 1/4 c onions, sliced .
  • 1/2 red bell pepper, cut into 1/8-inch thick strips

Directions
  • Step #1 To prepare Crunchy Coleslaw:.
  • Step #2 Combine yogurt, vinegar, mayonnaise, pepper sauce & salt in small bowl.
  • Step #3 Add coleslaw mix & bell pepper; toss to coat.
  • Step #4 Spice up with black pepper, as desired.
  • Step #5 Refrigerate, covered, until ready to serve.
  • Step #6 Brown ground beef with onion in large nonstick skillet over med-heat/flame 8 to 10 mins or until beef is no longer pink, breaking beef up into 3/4-inch crumbles.
  • Step #7 Pour off drippings.
  • Step #8 Stir in ketchup, corn, beans, tomato sauce, chipotle peppers & cumin; bring to a boil.
  • Step #9 Reduce heat; simmer 5 mins, stirring often.
  • Step #10 Stir in cilantro, salt & black pepper.
  • Step #11 Place beef mixture on bottom half of each bun; top this with coleslaw.
