Potato Pancakes Recipe

Ingredients
  • 1/2 tsp thyme .
  • 16 oz Egg Beaters egg substitute (small carton) .
  • 2 tbsps flour .
  • 4 tbsps corn oil .
  • 2 tsps salt (to taste) .
  • 1 tsp fresh coarse ground black pepper .
  • 3 green onions, finely sliced .
  • 1 (26 oz) bag frozen hash brown potatoes, thawed overnight

Directions
  • Step #1 Thoroughly mix all ingredients In a large-ish bowl.
  • Step #2 Spoon mixture onto hot griddle & spread into 1/2 inch pancakes.
  • Step #3 Cook about 8 mins each side or until pancakes are browned & crispy.
  • Step #4 Pancakes can be lightly cooked & held in a warm oven, then returned to the hot griddle & finished later.
  • Step #5 Serve with apple sauce & non-fat sour cream on the side.
