Tomato-basil-sauterne Grilled Chicken Recipe

Ingredients
  • 3 tbsps olive oil, divided .
  • 2 garlic cloves, minced .
  • 1 c sauterne white wine .
  • freshly grated parmesan cheese .
  • 1 tbsp butter .
  • 4 boneless skinless chicken breast halves .
  • 1 medium onion, finely sliced .
  • salt & pepper .
  • 8 oz uncooked fettuccine pasta .
  • 1/2 c sliced fresh basil .
  • 8 large plum tomatoes, seeded & sliced

Directions
  • Step #1 Spice up chicken breast halves with salt & pepper.
  • Step #2 Combine sauterne, tomatoes, basil, & chicken & place this in a shallow dish.
  • Step #3 Cover up dish & marinate for several hrs or overnight in refrigerator.
  • Step #4 When ready to cook, remove chicken from marinade & set aside; reserve marinade for the sauce.
  • Step #5 Sauté sliced onion in 2 tbsps olive oil over med-heat/flame until translucent.
  • Step #6 Add garlic & sauté another min.
  • Step #7 Add reserved marinade.
  • Step #8 Bring up to a boil & cook for 2-3 mins, stirring every once in awhile Keep sauce warm while grilling chicken.
  • Step #9 Grill chicken over hot coals until done.
  • Step #10 While the chicken is grilling, boil the fettuccine as directed on package.
  • Step #11 Drain the fettuccine & toss with the butter & remaining olive oil.
  • Step #12 Place the fettuccine on a serving dish.
  • Step #13 Arrange the grilled chicken breasts over the fettuccine & top this with the sauce.
  • Step #14 Sprinkle top with freshly grated Parmesan cheese.
