Greek Salad Recipe

Ingredients
  • 1 c green peppers .
  • 1 garlic clove .
  • 2/3 c olive oil .
  • pepper .
  • 3 tomatoes .
  • 2 tsps dried oregano .
  • 4 oz feta cheese .
  • 1/2 tsp salt .
  • 1 tbsp lemon juice .
  • 1 red onion .
  • 1/2 c olives .
  • 1 cucumber .
  • 2 tbsps red wine vinegar .
  • 1 c red peppers

Directions
  • Step #1 Dice up the vegetables- I usually use a small red onion as I don't like it to overpower the salad.
  • Step #2 You can adjust the vegetables to your tastes.
  • Step #3 Place the vegetables in a bowl along with the olives & feta cheese.
  • Step #4 Mix olive oil, oregano, garlic, red wine vinegar, lemon juice, salt & pepper & pour over the vegetables.
  • Step #5 Usually I let everything sit & marinate in the fridge for approximately 1/2 an hr.
  • Step #6 This seems to marry the flavours! I like to serve it in a clear serving bowl as the colours are so fresh & appealing.
