Peruvian-style Chicken Tacos Recipe

Ingredients
  • 1/4 c sliced pimento stuffed olives .
  • 1 (14 1/2 oz) can sliced tomatoes .
  • 12 (6 inch) corn tortillas or flour tortillas .
  • 1/4 c sliced pitted dried plums .
  • 1/4 c shredded monterey jack cheese .
  • cilantro (to garnish) .
  • 2 tsps ground coriander .
  • 1/2 c sliced onions .
  • 2 tsps ground cumin .
  • 1 potato, peeled & finely sliced .
  • 1 lb uncooked ground chicken breast

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 In a large skillet cook chicken & onion until chicken is no longer pink; stir this to break up pieces.
  • Step #3 Drain, if necessary.
  • Step #4 Add spices (salt to taste); cook & stir for 1 to 2 mins.
  • Step #5 Add undrained tomatoes, potato, plums & olives.
  • Step #6 Bring to boil; reduce heat.
  • Step #7 Simmer covered, 12 to 15 mins or until potatoes are tender.
  • Step #8 Uncover; cook 5 mins more or until most of liquid has evaporated.
  • Step #9 Wrap tortillas in foil wrap; bake for 15 mins or until heated.
  • Step #10 To assemble, place 1/3 c chicken mixture in center of each tortilla; top this with cheese & sprinkle with extra onion & fresh cilantro.
  • Step #11 Fold tortillas in half.
