Italian Chicken And Veggie Soup Recipe

Ingredients
  • parmesan cheese, Grated (optional) .
  • 1 small onion, sliced .
  • 2 1/2 c zucchini, sliced (about 2 medium) .
  • 4 boneless skinless chicken breasts, cut into bite-sized pieces (about 1 & 3/4 lbs) .
  • 2 tbsps olive oil .
  • 2 (14 oz) cans sliced tomatoes with basil oregano & garlic .
  • 2 (14 oz) cans chicken broth .
  • 1 c carrots, sliced (about 3 small)

Directions
  • Step #1 In a large Dutch oven or pot, heat olive oil over medium-high heat.
  • Step #2 Stirring frequently, add chicken & cook for 10 mins.
  • Step #3 Next add onion & carrot, then cook for an extra 5 mins.
  • Step #4 Mix in zucchini, sliced tomatoes, & chicken broth.
  • Step #5 Bring everything to a boil; then reduce heat, & let simmer, uncovered, for 30 mins.
  • Step #6 Top each serving with grated Parmesan, if desired.
  • Step #7 Serve with Parmesan Pastry Twists or other favorite crusty breads.
