Step #1 Put the coriander & cumin into a dry frying pan & roast over low heat/flame till dark brown in colour.
Step #2 Add the meat & all of the other spices, coconut cream & meat, simmer till meat is tender.
Step #3 (if the meat is too dry, add a little water ).
Step #4 Add the coconut milk & let simmer for 15 mins Strain & keep the liquid, & set the meat on one side.
Step #5 Melt the ghee in a pan & fry the cooked meat for three mins, add the reserved liquid to the pan, bring to the boil & add the salt & lemon juice.
