Ceylon Beef Curry Recipe

Ingredients
  • 2 inches cinnamon sticks, broken into pieces .
  • 5 garlic cloves, crushed .
  • 3/4 tbsp ground coriander .
  • 1 onion, finely sliced .
  • 1 inch piece fresh ginger .
  • 2 lbs stewing beef, cubed .
  • 1 1/2 c coconut milk .
  • 1 lemon, juice of .
  • 3/4 c white vinegar .
  • 1 tbsp ground turmeric .
  • 1 tbsp ground cumin .
  • 1/2 tsp salt .
  • 3/4 c coconut cream .
  • 2 tbsps ghee (clarified butter)

Directions
  • Step #1 Put the coriander & cumin into a dry frying pan & roast over low heat/flame till dark brown in colour.
  • Step #2 Add the meat & all of the other spices, coconut cream & meat, simmer till meat is tender.
  • Step #3 (if the meat is too dry, add a little water ).
  • Step #4 Add the coconut milk & let simmer for 15 mins Strain & keep the liquid, & set the meat on one side.
  • Step #5 Melt the ghee in a pan & fry the cooked meat for three mins, add the reserved liquid to the pan, bring to the boil & add the salt & lemon juice.
  • Step #6 Served with boiled rice.
