Chocolate Oatmeal Cake Recipe

Ingredients
  • 1/2 c stick margarine, softened
  • COFFEE FROSTING:
  • 1 1/2 c boiling water
  • 1 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 c all-purpose flour
  • 1 c semisweet chocolate chips
  • 3/4 c packed brown sugar
  • 1/4 c half-and-half cream, warmed
  • 3/4 c sugar
  • 1 tsp baking soda
  • 4 c confectioners' sugar
  • 1/2 c stick margarine, softened
  • 1/8 tsp salt
  • 1 c quick-cooking oats
  • 2 tsps instant coffee granules

Directions
  • Step #1 In a bowl, mix the water & oats.
  • Step #2 Sprinkle top with chocolate chips (do not stir); let this stand for 20 mins.
  • Step #3 In a mixing bowl, cream margarine & sugars.
  • Step #4 Add eggs, one at a time, beating well after each addition.
  • Step #5 Beat in oat mixture.
  • Step #6 Combine flour, baking soda & salt; add to the creamed mixture & mix well.
  • Step #7 Pour into a greased 13-in.
  • Step #8 x 9-in.
  • Step #9 x 2-in.
  • Step #10 baking pan.
  • Step #11 Bake at 350 degrees F for 35-40 mins or until a toothpick inserted near the center comes out clean.
  • Step #12 Cool on a wire rack.
  • Step #13 For frosting, dissolve coffee granules in cream; set aside.
  • Step #14 In a small mixing bowl, cream margarine; add vanilla & salt.
  • Step #15 Gradually beat in sugar.
  • Step #16 Beat in enough of the coffee mixture to achieve spreading consistency.
  • Step #17 Frost the cake.
