John's Breakfast Burritos Recipe

Ingredients
  • 2 c shredded uncooked potatoes .
  • 3 tbsps butter .
  • 1 c shredded cheddar cheese .
  • 1/8 tsp salt .
  • 1/8 tsp pepper .
  • 1 c guacamole .
  • 1 c salsa .
  • 1 c sour cream .
  • 5 tortillas .
  • 6 eggs

Directions
  • Step #1 Melt 2 tbsps butter in a frying pan.
  • Step #2 Place shredded potato in the frying pan.
  • Step #3 Fry the shredded potato until browned evenly.
  • Step #4 In a seprate frying pan melt the remaining 1 tbsp butter.
  • Step #5 In a bowl whisk eggs with the salt & pepper.
  • Step #6 Pour the seasoned eggs in to the frying pan.
  • Step #7 Scramble eggs until fully cooked.
  • Step #8 While the eggs & potato are cooking warm the tortillas in the microwave for 20 seconds in a tortilla warmer.
  • Step #9 Place warmed tortillas onto plates.
  • Step #10 Top each tortilla with 1 1/2 tbsps scrambled eggs, 1 Tablespoon shredded cooked potato, 1 1/2 tsp salsa, 1 1/2 tsp shredded cheddar cheese, 1 tsp sour cream, & 1 tsp gaucamole.
  • Step #11 Note: You may want to microwave the topped tortillas for 20 seconds after adding the shredded cheddar cheese to melt the cheese.
