Cinnamon Date Biscotti 2007 Recipe

Ingredients
  • 1 1/2 tsps cinnamon .
  • 4 c all-purpose flour .
  • 1 c canola oil .
  • 1 c granulated sugar .
  • 1 c sliced dates .
  • 1 tsp baking soda .
  • 1 egg, for glaze brushing .
  • 1/2 tsp salt .
  • 1 c sliced walnuts .
  • 1 c brown sugar .
  • 4 large eggs

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 In a large bowl mix flour, spice, salt, nuts, soda, & dates.
  • Step #3 In another bowl whisk the eggs with the oil, sugars, until dissolved.
  • Step #4 Pour egg mixture over flour mixture & mix well with wooden spoon, then turn out onto a floured board & knead until mixed.
  • Step #5 Divide dough into 4 pieces & form each into a loaf about 10 inches long leaving four inches between each on a parchment lined sheet.
  • Step #6 Beat last egg with a fork & brush over the tops of unbaked loaves.
  • Step #7 Sprinkle top with coarse sugar if desired.
  • Step #8 Bake 20 mins to 25 mins or until nice & golden brown.
  • Step #9 Remove from oven & place parchment onto wire rack to cool.
  • Step #10 Place cooled loaves on a cutting board & slice 1/2 thick.
  • Step #11 Store when well cooled in a tight fitting tin.
  • Step #12 Can place slices back on parchment & toast another 5 mins on each side for a twice baked cookie.
  • Step #13 This is optional.
