Zucchini Piccata Recipe

Ingredients
  • 1 tbsp olive oil .
  • 1 dash pepper .
  • 1 small garlic clove, minced .
  • 1/2 c breadcrumbs .
  • olive oil, for frying (about 3 tbsp) .
  • 1/2 c parmesan cheese, grated .
  • 1 dash salt .
  • 2 eggs .
  • 1 dash black pepper .
  • 1 tbsp red onions, finely sliced .
  • 1 large zucchini .
  • 1 (14 1/2 oz) can crushed tomatoes .
  • Tomato Sauce .
  • 1 tsp capers .
  • 2 tbsps fresh basil, sliced or 2 tsps dried basil

Directions
  • Step #1 For tomato sauce, heat 1 tbsp olive oil In a large-ish saucepan.
  • Step #2 Add crushed tomatoes & bring to a medium boil.
  • Step #3 Cook , stirring often, until reduced & thickened a bit.
  • Step #4 Add basil, capers, garlic & onion.
  • Step #5 Cook for 2-3 mins.
  • Step #6 Spice up to taste with salt & pepper.
  • Step #7 Set aside & keep warm.
  • Step #8 Rinse zucchini & pat dry.
  • Step #9 Cut into slices about 1/8 inch thick.
  • Step #10 Pat dry with paper towels.
  • Step #11 Beat eggs slightly in a deep pie plate.
  • Step #12 In another deep pie plate or shallow dish, parmesan cheese, mix bread crumbs, & black pepper.
  • Step #13 Heat 3 tbsp oil in a medium skillet.
  • Step #14 Dip zucchini slices into beaten egg, then press both sides into crumb mixture.
  • Step #15 Add zucchini slices to hot oil & pan fry on each side until golden brown.
  • Step #16 Serve as soon as possible with tomato sauce.
