Roast Pumpkin, Feta And Pine Nut Pasty Recipe

Ingredients
  • 1 egg yolk .
  • 4 sheets butter puff pastry, cut into 15cm squares .
  • 3 garlic cloves, crushed .
  • sea salt, to sprinkle .
  • 1 tbsp sesame seeds .
  • 2 tbsps pine nuts, toasted .
  • 1 tbsp milk .
  • 100 g marinated feta .
  • 3 tbsps oregano leaves, roughly sliced .
  • 2 tbsps olive oil .
  • 800 g fresh pumpkin, skin removed & cut into 1cm 1/2inch thick slices

Directions
  • Step #1 Preheat the oven to 220c place pumpkin on a baking tray & toss with olive oil garlic & salt & pepper.
  • Step #2 Roast in oven for 40 mins or until cooked & golden.
  • Step #3 Remove & allow this to cool.
  • Step #4 Evenly divide the pumpkin among the four pastry squares, placing in the centre.
  • Step #5 Top with oregano, feta & pine nuts.
  • Step #6 Drizzle with a little of the feta marinating oil.
  • Step #7 Bring 2 of the diagonally opposite corners together & pinch to seal along the edges.
  • Step #8 The base will be square the top will be a pyramid shape.
  • Step #9 Twist the top to seal where the four corners meet.
  • Step #10 Place the egg yolk & milk in a small bowl & whisk with a fork to make an egg wash for the pastry.
  • Step #11 Place the pasties on a baking tray & brush with the egg wash.
  • Step #12 Sprinkle top with sesame seeds & sea salt & bake for 15 mins or until golden brown.
