Ingredients
  • 3 tsps sugar .
  • 3 lbs boneless pork loin .
  • 3 tbsps morton tender quick

Directions
  • Step #1 Curing:.
  • Step #2 Trim fat from pork loin.
  • Step #3 Mix Morton Tender Quick & sugar.
  • Step #4 Rub mixture into the loin.
  • Step #5 Place loin in "food grade" plastic bag; tie open end.
  • Step #6 Refrigerate & allow to cure for 3-5 days.
  • Step #7 Remove from cure.
  • Step #8 Soak loin in cool water for 30 mins; pat dry.
  • Step #9 Refrigerate uncovered to dry slightly before cooking.
  • Step #10 Cooking:.
  • Step #11 Cut into 1/8 inch thick slices.
  • Step #12 Preheat skillet; brush with oil.
  • Step #13 Fry over low heat/flame, turning to brown evenly, about 8 - 10 mins.
