Sweet Carrot Pumpkin Bars Recipe

Ingredients
  • 1 orange, rind of, grated .
  • 1 tsp baking powder .
  • 1 c all-purpose flour .
  • 2 tbsps trans fat-free margarine or butter, melted .
  • 1/2 c raisins .
  • 1/2 tsp ground cinnamon .
  • 1/4 tsp salt .
  • 1/2 c canned pumpkin .
  • 1 large egg .
  • 1 large egg white .
  • 1/2 c packed grated carrots .
  • 1/3 c dried cranberries or sliced dried apricots .
  • 1/4 tsp baking soda .
  • 1 c packed brown sugar .
  • 2 tbsps canola oil .
  • 1 tsp vanilla extract .
  • 1/3 c sliced walnuts or pecans

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Combine flour, baking powder, baking soda, cinnamon & salt.
  • Step #3 In separate bowl, beat egg & egg white until foamy.
  • Step #4 Beat in sugar, pumpkin, oil, margarine, orange peel & vanilla extract until smooth.
  • Step #5 Add flour mixture to egg mixture & stir by hand until almost mixd.
  • Step #6 Stir in carrots, raisins, cranberries & nuts just until mixed.
  • Step #7 Spread batter into 8"x 8" pan coated with cooking spray.
  • Step #8 Bake 30 to 35 mins, until top springs back when lightly touched.
  • Step #9 Cool in pan on rack.
