Rasperry Tiramisu Recipe

Ingredients
  • 1 tbsp cornstarch .
  • 1/4 c coffee liqueur or strong coffee .
  • 2 tbsps unsweetened cocoa powder .
  • 1 c powdered sugar .
  • 4 c raspberries .
  • 2 (8 oz) packages cream cheese, softened .
  • 1/2 c sugar .
  • 1/2 c sour cream .
  • 2 (3 oz) packages ladyfingers

Directions
  • Step #1 In medium size saucepan, mix sugar & cornstarch until mix until well mixed; stir in the 3 c of the raspberries.
  • Step #2 Bring to a boil over medium high heat; boil 2 mins or until thickened.
  • Step #3 Cool to about room temp; stir in the remaining 1 c raspberries.
  • Step #4 In large bowl mix cream cheese, powdered sugar & liqueur/coffee until smooth; stir in the sour cream.
  • Step #5 Separate & arrange half the lady fingers on bottom of 9 inch square glass baking dish, overlapping slightly.
  • Step #6 Spoon half the raspberry mixture on top, then half the cream cheese mixture.
  • Step #7 Sift half the cocoa powder on top; repeat layers ending with cocoa powder.
  • Step #8 Cover up with plastic wrap & put in the fridge at least 4 hrs.
  • Step #9 Garnish with mint sprigs & fresh raspberries, if desired.
