Aromatic Parsnips And Carrots Recipe

Ingredients
  • 1/2 tsp ground coriander .
  • 1/8 tsp black pepper .
  • 2 tbsps lemon juice .
  • 1 tsp lemon peel, grated .
  • 1/4 tsp ground cinnamon .
  • 1/2 tsp salt .
  • 3/4 tsp fennel seeds, crushed .
  • 4 garlic cloves, minced .
  • 1 1/2 lbs small parsnips, peeled & halved lengthwise .
  • 1 1/2 lbs baby carrots, peeled & halved lengthwise .
  • 2 tbsps fresh cilantro, sliced .
  • 4 tbsps olive oil

Directions
  • Step #1 In a large skillet, cook parsnips, covered, in a small amount of boiling salted water for 2 mins.
  • Step #2 Add carrots & cook for 4 more mins.
  • Step #3 Drain & set aside.
  • Step #4 Wipe skillet dry.
  • Step #5 Heat 3 tbsp oil over med-heat/flame.
  • Step #6 add fennel, coriander & cinnamon.
  • Step #7 Cook about 1 min until fragrant, stirring every once in awhile.
  • Step #8 Add parsnips & carrots & garlic.
  • Step #9 Cook 10-12 mins or until tender, turning occasionaly.
  • Step #10 Remove from heat & stir in the cilantro, lemon juice & peel, salt, & pepper.
  • Step #11 Drizzle with 1 tbsp olive oil.
