Barefoot Contessa's Banana Sour Cream Pancakes Recipe

Ingredients
  • 3 tbsps sugar .
  • 1/2 c sour cream .
  • 1 tsp pure vanilla extract .
  • 2 ripe bananas, sliced, plus extra for serving .
  • 2 tsps baking powder .
  • 3/4 c milk, plus .
  • 1 tbsp milk .
  • 1 1/2 tsps kosher salt .
  • pure maple syrup .
  • 1 tsp grated lemon zest .
  • 2 extra-large eggs .
  • 1 1/2 c all-purpose flour .
  • unsalted butter

Directions
  • Step #1 In a medium bowl, sift together the flour, sugar, baking powder, & salt.
  • Step #2 Whisk together the sour cream, vanilla, eggs, milk, & lemon zest.
  • Step #3 Add the wet ingredients to the dry ones, mixing only until mixd.
  • Step #4 Melt 1 tbsp of butter In a large-ish skillet over medium-low heat until it bubbles.
  • Step #5 Ladle the pancake batter (Ina uses a 1/4-c measure to drop the batter into the pan) into the pan.
  • Step #6 Distribute a rounded tbsp of bananas on each pancake.
  • Step #7 Cook 2 to 3 mins, until bubbles appear on top & the underside is nicely browned.
  • Step #8 Flip the pancakes & then cook for another min, until browned.
  • Step #9 Wipe out the pan with a paper towel, add more butter to the pan, & continue cooking pancakes until the batter is used.
  • Step #10 Serve with sliced bananas, butter, & maple syrup.
  • Step #11 **The pancakes will stay warm in a preheated 200-degree oven for 15 to 20 mins.
