Beet And Goat Cheese Arugula Salad Recipe

Ingredients
  • 1/4 c dried cranberries or dried cherries .
  • 6 c fresh arugula .
  • 3 tbsps shallots, thinly sliced .
  • salt & freshly ground black pepper .
  • 6 medium beets, cooked & quartered .
  • 1/2 c walnuts, toasted, coarsely sliced .
  • 1/2 avocado, peeled, pitted, & cubed .
  • 1/4 c balsamic vinegar .
  • 3 oz soft fresh goat cheese, coarsely crumbled .
  • 1 tbsp honey .
  • 1/3 c extra-virgin olive oil

Directions
  • Step #1 Line a baking sheet with foil wrap.
  • Step #2 Preheat the oven to 450 degrees F.
  • Step #3 Whisk the vinegar, shallots, & honey in a medium bowl to mix.
  • Step #4 Gradually whisk in the oil.
  • Step #5 Spice up the vinaigrette, to taste, with salt & pepper.
  • Step #6 Toss the beets in a small bowl with enough dressing to coat.
  • Step #7 Place the beets on the prepared baking sheet & roast until the beets are slightly caramelized, stirring every once in awhile, about 12 mins.
  • Step #8 Set aside & cool.
  • Step #9 Toss the arugula, walnuts, & cranberries In a large-ish bowl with enough vinaigrette to coat.
  • Step #10 Spice up the salad, to taste, with salt & pepper.
  • Step #11 Mound the salad atop 4 plates.
  • Step #12 Arrange the beets around the salad.
  • Step #13 Sprinkle top with the avocado & goat cheese, & serve.
