Potato Salad With Lemon-dill Vinaigrette Recipe

Ingredients
  • 1/2 tsp dried dill weed .
  • 3 tbsps lemon juice, freshly squeezed .
  • 1/4 c olive oil .
  • 2 tbsps capers (sliced if large) .
  • 1/2 c red onions, finely sliced .
  • 1 c celery, sliced .
  • 1 dash black pepper .
  • 1 tsp salt .
  • 2 lbs potatoes (yukon gold or russet)

Directions
  • Step #1 Peel potatoes & slice 1/4" thick.
  • Step #2 Cook just until fork tender; drain & transfer to a bowl.
  • Step #3 Add the celery & onion to the potatoes.
  • Step #4 Prepare the dressing: Combine remaining ingredients & stir well or shake in a small jar.
  • Step #5 Pour over the still-warm potatoes & stir carefully to mix, making sure all potatoes are coated.
  • Step #6 If desired, add more salt, pepper, or lemon juice to taste.
  • Step #7 Serve warm or at about room temp.
