Chocolate Crepes With Cranberry Sauce Recipe

Ingredients
  • 1/4 c sugar
  • 1/2 tsp grated orange peel
  • 1 1/2 c all-purpose flour
  • 3 eggs
  • 1 1/2 tsps vanilla extract
  • 1 1/2 c fresh or frozen cranberries
  • 1 tsp vanilla extract
  • 2 tbsps butter or margarine
  • 2 tbsps vegetable oil
  • 2 tbsps baking cocoa
  • CRANBERRY SAUCE:
  • 1/8 tsp salt
  • 1 c cranberry juice
  • 1 (8 oz) carton frozen whipped topping, thawed
  • 1 1/2 tsps cornstarch
  • 2 1/2 c milk, divided
  • 1/8 tsp salt
  • 1/2 c packed brown sugar
  • 1/4 tsp ground nutmeg
  • 1 (3.4 oz) package instant vanilla pudding mix

Directions
  • Step #1 In a bowl, whisk the pudding mix & 1 c of milk until smooth.
  • Step #2 Fold in whipped topping; cover & chill.
  • Step #3 In a mixer container, vanilla, cocoa, mix oil, eggs, sugar, flour, salt & remaining milk; process until smooth.
  • Step #4 Let stand for 20 mins.
  • Step #5 Meanwhile, mix the first seven sauce ingredients in a small saucepan; bring to a boil.
  • Step #6 Reduce heat & let simmer until smooth & thickened, stirring constantly, abut 15 mins.
  • Step #7 Remove from the heat; stir in the the butter & vanilla.
  • Step #8 Keep warm.
  • Step #9 Heat a lightly greased 6-in.
  • Step #10 skillet over med-heat/flame until hot.
  • Step #11 Pour 3 tbsps crepe batter into skillet & swirl quickly so bottom is evenly covered.
  • Step #12 Cook until top appears dry & bottom is lightly browned; turn & cook 15-20 seconds longer.
  • Step #13 Remove & keep warm.
  • Step #14 Repeat with remaining batter.
  • Step #15 To serve, fold crepes in quarters; place three on a dessert plate.
  • Step #16 Top with chilled pudding mixture & warm sauce.
