Ingredients
stock .
1 garlic clove, crushed .
water .
2 sticks celery, sliced .
1 tbsp cornflour, mixed with .
1 sprig herbs or dried herbs .
150 g mushrooms .
125 g pancetta or smoked bacon, strips .
1 dash dry white wine or cider vinegar or lemon juice .
200 g shallots or onions, in chunky slices .
1 tbsp butter .
1 roasting chicken (or breasts or thighs or joints) .
1 tbsp oil .
salt & pepper
Directions
Step #1 cut the chicken into pieces, heat oil in pan & fry off on each side (oil should be very hot so chicken browns but doesn't cook through).
Step #2 Remove chicken pour off oil add butter, fry off onions for a couple of mins until brown,.
Step #3 turn down heat add bacon & celery.
Step #4 add wine/cider/lemon juice & garlic.
Step #5 stir in the cornflour & herbs.
Step #6 mix in chicken, pour stock half way up casserole.
Step #7 Place sliced mushrooms on top & bake in oven for 1hr.
