Scarlett's Wiltshire Chicken Casserole Recipe

Ingredients
  • stock .
  • 1 garlic clove, crushed .
  • water .
  • 2 sticks celery, sliced .
  • 1 tbsp cornflour, mixed with .
  • 1 sprig herbs or dried herbs .
  • 150 g mushrooms .
  • 125 g pancetta or smoked bacon, strips .
  • 1 dash dry white wine or cider vinegar or lemon juice .
  • 200 g shallots or onions, in chunky slices .
  • 1 tbsp butter .
  • 1 roasting chicken (or breasts or thighs or joints) .
  • 1 tbsp oil .
  • salt & pepper

Directions
  • Step #1 cut the chicken into pieces, heat oil in pan & fry off on each side (oil should be very hot so chicken browns but doesn't cook through).
  • Step #2 Remove chicken pour off oil add butter, fry off onions for a couple of mins until brown,.
  • Step #3 turn down heat add bacon & celery.
  • Step #4 add wine/cider/lemon juice & garlic.
  • Step #5 stir in the cornflour & herbs.
  • Step #6 mix in chicken, pour stock half way up casserole.
  • Step #7 Place sliced mushrooms on top & bake in oven for 1hr.
