Garlic Pickled Eggs Recipe

Ingredients
  • 12 large hard-boiled eggs (peeled & cooled) .
  • 1/4 c white sugar .
  • 1 c distilled white vinegar .
  • 1 pinch cayenne pepper (optional) .
  • 8 large fresh garlic cloves .
  • 1/2 tsp salt .
  • 1 c beet juice (or use water) .
  • 1 medium onion, sliced

Directions
  • Step #1 Place the peeled eggs & onion slices in a 1-quart glass jar.
  • Step #2 In a saucepan bring the beet juice or water, salt, vinegar, sugar & garlic cloves; bring to a boil stirring for a couple of mins until the sugar & salt is dissolved; remove this from heat & let cool (about 30 mins).
  • Step #3 Pour the vinegar mixture over the eggs & cover tightly.
  • Step #4 Refrigerate for 7 days before using.
