Crock Pot (or Not) Vegetarian Chili Recipe

Ingredients
  • 1 (28 oz) can sliced tomatoes .
  • 1 green bell pepper, sliced .
  • 2 portabella mushrooms, sliced .
  • 2 onions, sliced .
  • 1 tsp salt, more to taste .
  • 10 garlic cloves, sliced .
  • 1 yellow bell pepper, sliced .
  • 1 (15 oz) can kidney beans, rinsed & drained .
  • 1 (15 oz) can whole kernel corn, drained .
  • 1 lb vegetarian ground beef .
  • 1 (28 oz) can tomato puree .
  • 6-8 tbsps chili powder (to taste) .
  • 1 (16 oz) can vegetarian baked beans .
  • 1 (15 oz) can garbanzo beans or navy beans, rinsed & drained .
  • 1 red bell pepper, sliced .
  • 1 (19 oz) can black bean soup .
  • 6 jalapenos, sliced

Directions
  • Step #1 In a slow cooker (aka crockpot), bell peppers, garbanzo beans, onions, baked beans, kidney beans, tomatoes, corn, mix black bean soup, jalepenos & mushrooms.
  • Step #2 Add garlic, chili powder, & salt.
  • Step #3 Cook for at least two hrs on High.
  • Step #4 Alternatively, cook vegetables in a small amount of oil In a large-ish pot on medium heat for 10 mins; add all other ingredients, bring to a simmer & cook 1-2 hrs until flavours have mixd & vegetables are soft.
