Scott's Mountain-thunder Football Chili Recipe

Ingredients
  • 1 (13 oz) can beef broth .
  • Chili .
  • 3 tbsps chipotle hot sauce (Jump up & Kiss me brand preferred) .
  • 1/2 tsp salt .
  • 3 tbsps texas-style chili powder .
  • 3 tbsps texas-style chili powder (Gephardt's brand preferred) .
  • 1/2 tsp onion powder .
  • Spice Mix 2 .
  • Spice Mix 1 .
  • 1 (12 oz) can domestic beer .
  • 1 tsp garlic salt .
  • 4-5 drops Tabasco sauce .
  • 1 tbsp onion powder .
  • 1 tbsp ground cumin .
  • 3 lbs london broil beef, cut into 1/4 inch cubes .
  • 1/2 tsp black pepper .
  • 1/2 tsp salt .
  • 1 small white onion (finely sliced) .
  • 1 (8 oz) can no-salt-added tomato sauce .
  • 1 tbsp brown sugar .
  • 1 tbsp maple syrup .
  • 1 tsp pumpkin pie spice .
  • 1 (8 oz) can sliced green chilies .
  • 1 tbsp ground cumin .
  • 1/2 tsp pumpkin pie spice .
  • 1 green pepper (finely sliced) .
  • 1 (13 oz) can chicken broth .
  • 1 tsp vegetable shortening

Directions
  • Step #1 Combine spice mixes in 2 separate containers.
  • Step #2 Set aside.
  • Step #3 In a 5-quart Dutch oven, heat shortening over med-heat/flame & cook beef until no longer pink.
  • Step #4 Add onions, beef broth, chicken broth & Spice Mix 1, beer, tomato sauce, peppers, & bring to a boil.
  • Step #5 Lower heat & let simmer for 1/1/2 hrs.
  • Step #6 Stir in Spice Mix 2, chipotle sauce, maple syrup & Tabasco.
  • Step #7 Simmer 1/2 hr longer.
  • Step #8 Adjust seasoning if needed.
