Hot And Sour Soup Recipe

Ingredients
  • 1 tsp toasted sesame oil .
  • 2 tbsps reduced sodium soy sauce .
  • 2 tsps peanut oil or cooking oil .
  • 5 oz cooked chicken breasts, shredded (1 c) .
  • 2 (14 oz) cans chicken broth .
  • 1 tsp chili oil or 1/2 tsp crushed red pepper flakes .
  • 2 tbsps cold water .
  • 2 fresh garlic cloves, minced .
  • 2 tbsps seasoned rice vinegar .
  • 1 tbsp cornstarch .
  • 2 c coleslaw mix, with carrots shredded or napa cabbage, shredded .
  • 4 oz fresh shiitake mushrooms, stems removed & caps thinly sliced

Directions
  • Step #1 Cook & shred chicken.
  • Step #2 Set aside.
  • Step #3 In a large saucepan, cook mushrooms & garlic in hot oil over med-heat/flame for 4 mins, stirring every once in awhile.
  • Step #4 Stir in broth, soy sauce, vinegar, & chile oil or red pepper flakes; bring to a boil.
  • Step #5 Stir in chicken & coleslaw mix or napa cabbage; reduce heat to low & let simmer uncovered for 5 mins.
  • Step #6 In a small bowl or c mix cornstarch with water.
  • Step #7 Stir into soup; simmer about 2 mins or until slightly thickened.
  • Step #8 Remove from heat.
  • Step #9 Stir in sesame oil.
