3/4 c sliced fresh strawberries or sliced peeled peaches or nectarines .
1/4 tsp lemon-pepper seasoning .
1/3 c sliced peeled kiwi fruits or fresh apricots .
1 fresh jalapeno pepper, seeded & sliced* .
1 tsp olive oil or cooking oil .
fresh cilantro stems (optional) .
14-16 oz salmon fillets or halibut fillets (about 1 inch thick, fresh or frozen) .
nonstick cooking spray .
1 tbsp orange juice or apple juice .
1 tbsp snipped fresh cilantro
Directions
Step #1 Thaw fish, if frozen.
Step #2 Rinse fish; pat dry with paper towels.
Step #3 Cut into 4 serving-size pieces.
Step #4 For fruit salsa, stir this together strawberries, in a medium bowl, peaches, or nectarines; kiwifruit or apricots; the snipped cilantro; the orange juice or apple juice; & jalapeno chile pepper.
Step #5 Set aside.
Step #6 Brush both sides of each fish piece with oil.
Step #7 Sprinkle top with lemon-pepper seasoning.
Step #8 Coat the unheated rack of a broiler pan with nonstick cooking spray.
Step #9 Place fish on rack.
Step #10 Broil 4 inches from heat for 8 to 12 mins or just until fish flakes easily when tested with a fork, turning once halfway through broiling.
Step #11 Serve with the fruit salsa.
Step #12 If desired, garnish with cilantro sprigs.
Step #13 Makes 4 servings.
Step #14 *Note: Because chile peppers contain volatile oils that can burn your skin & eyes, avoid direct contact with them as much as possible.
Step #15 When working with chile peppers, wear plastic or rubber gloves.
Step #16 If your bare hands do touch the peppers, wash your hands & nails well with soap & warm water.
Step #17 Grill Method: Coat the unheated rack of an uncovered grill with nonstick cooking spray.
Step #18 Place fish on rack directly over medium coals.
Step #19 Grill for 8 to 12 mins or just until fish flakes easily when tested with a fork, turning once halfway through grilling.
