Pistachio Fudge Recipe

Ingredients
  • 1/2 c sliced pistachios .
  • 3 c confectioners' sugar .
  • 1/2 tsp vanilla extract .
  • 1/4 tsp almond extract .
  • extra pistachios, if desired (to garnish) .
  • 1 lb white baking chocolate .
  • 1/8 tsp green food coloring .
  • 1 (8 oz) package cream cheese, softened

Directions
  • Step #1 Line an 8-inch square pan with foil wrap, allowing foil wrap to extend over sides of pan.
  • Step #2 Spray with no stick cooking spray.
  • Step #3 Melt chocolate in microwave, as directed on package of chocolate.
  • Step #4 Beat cream cheese in large bowl with electric mixer until smooth.
  • Step #5 Gradually beat in sugar on lowish speed until well mixed.
  • Step #6 Add melted chocolate, extracts & food color; mix well.
  • Step #7 Stir in sliced pistachios.
  • Step #8 Spread evenly in prepared pan.
  • Step #9 Garnish with extra pistachios, if desired.
  • Step #10 Refrigerate at least 1 hr or until firm.
  • Step #11 Use foil wrap to lift out of pan onto cutting board.
  • Step #12 Cut into 25 (1 1/2-inch) squares.
  • Step #13 Store in refrigerator.
  • Step #14 Substitute: One bag (12 oz) white chocolate chips can be substituted for the white chocolate squares.
