Greek Seafood Pasta Recipe

Ingredients
  • fresh ground black pepper, to taste .
  • 2 garlic cloves, minced .
  • water .
  • 1/2 tbsp fresh sage (sliced) .
  • 6 olives, sliced (suggest kalamata) .
  • 1 red pepper, roasted & cut into thin strips .
  • 3 tbsps red wine vinegar .
  • 1/2 lb pappardelle pasta .
  • salt .
  • 4 oz feta cheese (crumbled) .
  • 2 c tomatoes, crushed canned Italian style .
  • 2 tbsps olive oil .
  • 1 jalapeno chiles, seeded & finely minced .
  • 1/2 lb medium shrimp .
  • 1/2 lb sea scallops .
  • 2 scallions, white & some green, minced .
  • 1 tbsp capers, drained

Directions
  • Step #1 Heat oil in a non-reactive Dutch oven over medium-high heat.
  • Step #2 Add the scallions, garlic & chili pepper.
  • Step #3 Cook, stirring often, 4 mins until wilted.
  • Step #4 Add tomatoes, vinegar, roasted peppers, & pepper.
  • Step #5 Heat to a boil over high heat; reduce heat to low.
  • Step #6 Cook, stirring every once in awhile, for 15 mins.
  • Step #7 Add the shrimp & scallops; cook 6 mins until done; set aside.
  • Step #8 Meanwhile, cook pasta in boiling salted water until al dente, drain, reserving 1 c cooking liquid.
  • Step #9 Stir olives, capers, feta & sage into the sauce; toss sauce with the pasta.
  • Step #10 Add reserved cooking liquid to reach desired consistency.
