Banana Cake With Pudding Icing Recipe

Ingredients
  • Cake Batter .
  • Frosting .
  • 2 large eggs, separated .
  • 1 (3 1/2 oz) package cook & serve vanilla pudding mix (NOT instant) .
  • 1 tsp vanilla .
  • 1/2 c vegetable shortening .
  • 1 c buttermilk .
  • 2-3 bananas, peeled & sliced .
  • 1 tsp vanilla .
  • 1 1/2 c granulated sugar .
  • 1 tsp baking soda .
  • 1 c granulated sugar .
  • 1/2 c unsalted butter, at about room temp .
  • 1 c milk .
  • 2 1/4 c all-purpose flour .
  • 1 tsp baking powder .
  • 1/2 c butter flavor shortening .
  • 1/2 tsp salt

Directions
  • Step #1 Mix sugar & shortening until creamy.
  • Step #2 Add egg yolks & bananas, beat thoroughly.
  • Step #3 Dissolve baking soda into buttermilk.
  • Step #4 Sift flour, baking powder & salt.
  • Step #5 Mix alternately flour mixture into the egg yolk mixture alternately with the buttermilk mixture.
  • Step #6 Add vanilla.
  • Step #7 Beat egg whites until stiff & fold into batter.
  • Step #8 Bake in a preheated 350 F degree oven for 40 mins, then let cool completely on racks.
  • Step #9 Frosting:.
  • Step #10 Cream the sugar, shortening & butter until light & fluffy.
  • Step #11 Cook vanilla pudding with milk until very thick.
  • Step #12 Cool & add to butter mixture.
  • Step #13 Mix with electric mixer at high speed for 15 mins or until it is not grainy.
  • Step #14 Add 1 tsp vanilla.
  • Step #15 Ice the cake, keep leftovers chilled.
  • Step #16 Yield: 2 (9-inch) layers.
