Apricot, Almond & Cream Cheese Crostata Recipe

Ingredients
  • 1 pie crust, roll out put in the fridged pie crust .
  • 5-6 large apricots, pitted & quartered .
  • 3 oz cream cheese, cut into 1/2 inch cubes .
  • 3 1/2 tbsps sugar, divided .
  • 1 large egg yolk .
  • 3 amaretti cookies, crushed (Italian macaroons) .
  • 1/4 c apricot jam, heated .
  • 3 1/2 oz almond paste .
  • 1 tsp vanilla

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Blend almond paste & 3T sugar in food processor/blender until finely sliced.
  • Step #3 Add cream cheese, egg yolk, & vanilla.
  • Step #4 Blend until smooth.
  • Step #5 Unroll pie crust on heavy rimmed baking sheet.
  • Step #6 Spread filling over crust, leaving 1 1/2 inch plain border.
  • Step #7 Arrange apricot quarters, rounded side down, in a spoke pattern in 2 concentric circles atop filling.
  • Step #8 Fold dough border up over the edge of filling.
  • Step #9 Brush exposed apricots with warm jam.
  • Step #10 Sprinkle top with remaining 1 1/2 tsps sugar.
  • Step #11 Bake crostata until crust is golden brown & apricots are tender & slightly browned about 43 mins.
  • Step #12 Sprinkle top with crushed Amaretti cookies.
  • Step #13 Cool 30 mins.
  • Step #14 Serve warm or at about room temp.
