Veal (or Chicken) With Mushroom Sauce Topped With Cheese Recipe

Ingredients
  • 2 tbsps parmesan cheese, grated .
  • 2 tbsps flour .
  • 2 tbsps butter .
  • 1/4 lb fresh mushrooms, sliced .
  • 1/4 tsp pepper .
  • 1 tbsp chicken bouillon granules .
  • 1/2 c water .
  • 1-2 lb veal cutlets or chicken cutlets .
  • 3/4 c dry white wine .
  • cooking spray .
  • 1/4 c lowfat mozzarella cheese, shredded

Directions
  • Step #1 Coat the veal or chicken with cooking spray.
  • Step #2 Place butter in skillet & heat over medium-high heat until butter melts.
  • Step #3 Add veal or chickenand saute 1-2 mins per side until it lightly browns.
  • Step #4 Drain on paper towels & place this in a baking dish coated with cooking spray.
  • Step #5 Sprinkle top with meat with pepper & let it rest.
  • Step #6 Cook mushrooms in skillet until tender & remove this from pan; reserve drippings.
  • Step #7 Spread mushrooms over the meat.
  • Step #8 Add flour to the drippings in the pan & stir until smooth.
  • Step #9 Cook over low heat/flame for 1 min, stirring constantly.
  • Step #10 Gradually add wine, water & bouillon granules & cook over med-heat/flame, stirring constantly, until thick & bubbly.
  • Step #11 Spoon sauce over meat & mushrooms.
  • Step #12 Top with cheeses.
  • Step #13 Bake at 425F degrees F.
  • Step #14 for 10-12 mins for veal & 20-30 mins for chicken.
