Ingredients
Pan Dough .
3 1/2 c flour .
1 c warm tap water (110-115 degrees) .
1 (14 1/2 oz) can sliced tomatoes, drained .
5 fresh basil leaves, sliced fine .
Pizza Topping .
4 tbsps grated parmesan cheese .
1 1/4 oz active dry yeast .
1/4 c vegetable oil .
1/2 c course ground cornmeal .
1 lb mozzarella cheese, sliced thin .
1 lb Italian sausage, removed from the casing & crumbled .
2 garlic cloves, peeled & minced .
1 tsp salt
Directions
Step #1 Pour the warm water into a large mixing bowl & dissolve the yeast with a fork.
Step #2 Add 1 c of flour, salt, & vegetable oil, all of the cornmeal, & mix well with a spoon.
Step #3 Continue stirring in the rest of the flour 1/2 c at a time, until the dough comes away from the sides of the bowl.
Step #4 Flour your hands & the work surface & kneed the ball of dough until it is no longer sticky.
Step #5 Let the dough rise in an oiled bowl, for 45-60 mins in a warm place, sealed with plastic wrap, until it has doubled in size.
Step #6 Punch it down & kneed it briefly.
Step #7 Press it into an oiled 15-inch deep dish pizza pan until it comes 2 inches up the sides & is even on the bottom of the pan.
Step #8 Let the dough rise 15-20 mins before filling.
Step #9 Preheat the oven to 500 degrees.
Step #10 While the dough is rising, prepare the filling.
Step #11 Cook the sausage until it is no longer pink & drain the excess fat.
Step #12 When the dough has finished its second rising, lay the cheese over the dough shell.
Step #13 Distribute the sausage & garlic over the cheese.
Step #14 Top with the tomatoes.
Step #15 Sprinkle top on the seasonings & Parmesan cheese.
Step #16 Bake for 15 mins at 500 degrees, then lower the temperature to 400F degrees & finish baking for 25-35 mins longer.
Step #17 Lift up a section of the crust from time to time with a spatula to check its color.
Step #18 The crust will be golden brown when done.
Step #19 Serve as soon as possible.
