Seafood Lasagna Recipe

Ingredients
  • 28 oz spaghetti sauce .
  • 1/8 tsp black pepper .
  • 1/2 c low-fat ricotta cheese .
  • 1/4 c freshly grated parmesan cheese .
  • 1 tbsp minced fresh parsley .
  • 6 oz cooked baby shrimp, thawed & drained .
  • 4 oz surimi, thawed & thinly sliced .
  • 2/3 c shredded lowfat mozzarella cheese .
  • 4 oz lasagna noodles

Directions
  • Step #1 Heat oven to 375°F Prepare lasagna according to package directions.
  • Step #2 Empty spaghetti sauce into saucepan & let simmer for 10 mins until thickened & reduced to about 3 c; stir in the shrimp & Surimi Seafood.
  • Step #3 Combine ricotta cheese, Parmesan cheese, parsley & pepper in small bowl.
  • Step #4 To assemble lasagna, place half of noodles in 8 x 8 inch casserole dish.
  • Step #5 Top with half of seafood sauce & drop half of ricotta mixture by small tspsful on top.
  • Step #6 Sprinkle top with half of mozzarella cheese.
  • Step #7 Repeat layers.
  • Step #8 Bake for 35 mins or until bubbly.
  • Step #9 Let stand 10 mins before cutting.
