Drunken Noodles Recipe

Ingredients
  • 1 tsp sambal oelek .
  • 2 chicken breasts, sliced into thin strips .
  • 1 (250 g) packet fresh rice noodle sheets, cut into 5 strips .
  • 4 tbsps oyster sauce .
  • 3 green onions, sliced roughly green bit only .
  • 3 leaves Chinese cabbage, roughly sliced .
  • 1/2 banana pepper, sliced .
  • 1 slice pickled garlic, for garnish (optional) .
  • 30 leaves Thai basil (Or holy basil) .
  • 30 leaves coriander .
  • 2 tbsps fish sauce .
  • 3 tbsps sliced roasted peanuts .
  • 1/2 lime, juice of .
  • 2 eggs, beaten .
  • 1 tbsp palm sugar .
  • 2 tbsps rice wine vinegar .
  • dried Thai basil, for garnish .
  • 3 red shallots, sliced (or 1/4 Red Onion) .
  • 3 garlic cloves, sliced .
  • 2 tomatoes, deseeded & sliced .
  • 1/2 red capsicum, sliced .
  • 2 tbsps peanut oil

Directions
  • Step #1 Soak noodles in hot water for 15 mins.
  • Step #2 Heat peanut oil in a wok until smoking.
  • Step #3 Add in the garlic, shallots & chilli & fry for 20 seconds.
  • Step #4 Add in the chicken & seal on all sides (about 30 seconds).
  • Step #5 Move all the ingredients to the side of the wok & add in the egg to the middle of the pan, let set for 20 seconds then break up with tongs.
  • Step #6 Toss the wok & add in the capsicum, tomato & cabbage & cook for 10 seconds.
  • Step #7 Add in the oyster sauce, fish sauce, vinegar, lime juice, palm sugar & sambal & toss through.
  • Step #8 Add in the noodles (drained of all water).
  • Step #9 Add the green onions, basil & coriander & serve in bowls.
  • Step #10 Garnish with peanuts, pickled garlic & thai basil leaves.
