Cucumber Shrimp Tea Sandwiches Recipe

Ingredients
  • 1/4 c plain low-fat yogurt .
  • 1 cucumber, sliced very thin .
  • 1/3 c minced green onions .
  • 1 1/2 lbs small shrimp or shrimp, cooked & peeled .
  • 1/2 tsp garlic salt .
  • 1 loaf bread, your choice (pumpernickel was the bread served at the party) .
  • 1/4 c tub-style light cream cheese, softened .
  • 1/4 c fat-free mayonnaise .
  • 1 tsp fresh dill .
  • 1/4 tsp black pepper

Directions
  • Step #1 Combine first 7 ingredients in a bowl.
  • Step #2 Trim the crusts from the bread slices.
  • Step #3 Spread the cream cheese mixture over the bread slices & cut into 4 triangles until you reach the number of shrimp you have.
  • Step #4 Arrange shrimp on each bread triangle.
  • Step #5 Arrange the cucumber evenly over shrimp.
  • Step #6 Chill, covered until serving.
