Maple Pecan Fudge Recipe

Ingredients
  • 1 1/2 c pecans, roughly sliced .
  • 3 tbsps light corn syrup .
  • 3/4 c pure maple syrup .
  • 4 tbsps unsalted butter .
  • 2 tsps vanilla extract .
  • 3 c sugar .
  • 1 1/2 c half-and-half .
  • 1 pinch salt

Directions
  • Step #1 line an 8-inch square baking pan with aluminum foil wrap that overhangs.
  • Step #2 coat the foil wrap with 1 tbsp of the butter.
  • Step #3 an a 3-quart heavy-bottomed sacuepan over low heat/flame, cook the maply syrup, half-and-half, & salt until the sugar is dissolved (aobut 5 mins), corn syrup, sugar, stirring constantly with a wooded sppon or heatproof spatuala.
  • Step #4 bringt he mixture to a boil over med-heat/flame, then brush down the sides of the pan with a pastry brush dipped in water to prevent the sugar from crystallizing.
  • Step #5 place a candy thermometre in the pan & cook the mixture without stirringuntil it registers 238 F on the thermometre (about 15 mins).
  • Step #6 remove the pan from the heat, remove the thermometre & place this in warm water to cool it.
  • Step #7 sprinkle a marble board, or the back of a baking sheet with cold water, adn as soon as possible pour the hot mixture on the marble DO NOT SCRAPE THE BOTTOM OF THE PAN! ( THIS CREATES HARD PARTS AND WILL THROW OFF THE CONSISTENCTY OF THE WHOLE BATCH).
  • Step #8 dot the surface with remaining 3 tbsps of butter.
  • Step #9 let the mixture cool on the marble intil it registers 110 F on the thermometre (about 5 mins)(or 15 mins with a baking sheet).
  • Step #10 scrape the mixture into a stand mixer, add the vanilla, & with the paddle attachement, beat for 5-10 mins until it looses its shine & thickens OR put in a bowl & use a wooden spoon.
  • Step #11 add sliced pecans, turn into prepared pan & use fingertips to even the top & press the fudge into the corners.
  • Step #12 place the pan on a cooling rack & let set for 2 hrs.
