Tomato Florentine Recipe

Ingredients
  • 1/4 c grated parmesan cheese .
  • 2 tbsps olive oil, divided .
  • 2 tbsps Japanese-style bread crumbs (panko) or dry breadcrumbs .
  • 1/4 tsp salt .
  • 1 (10 oz) package frozen sliced spinach, thawed .
  • 1/8 tsp ground nutmeg .
  • 1/4 tsp pepper .
  • 4 garlic cloves, finely sliced .
  • 1 medium onion, sliced .
  • 2 (28 oz) cans whole tomatoes, drained & coarsely sliced

Directions
  • Step #1 Drain spinach well, pressing between paper towels.
  • Step #2 Combine Parmesan cheese, 1 tbsps olive oil, & 2 tbsps breadcrumbs in a small bowl.
  • Step #3 Cook onion in remaining 1 tbsps hot oil in a medium skillet over med-heat/flame 5 mins or until tender.
  • Step #4 Add garlic, & cook 1 more min.
  • Step #5 Stir in spinach, & cook 2 mins or until thoroughly heated.
  • Step #6 Remove from heat, & stir in the salt, pepper, & nutmeg.
  • Step #7 Place tomatoes in a 9-inch square baking dish.
  • Step #8 Spoon spinach mixture evenly over tomatoes; sprinkle with breadcrumb mixture.
  • Step #9 Bake at 400° for 25 mins or until golden brown.
  • Step #10 Serve as soon as possible.
