Italian Zucchini With Roasted Tomatoes And Mushrooms Recipe

Ingredients
  • 1/2 tsp oregano .
  • 4-6 medium zucchini (thinly sliced) .
  • fresh fresh coarse ground black pepper .
  • 1 small onion, sliced .
  • 4 plum tomatoes (roasted, seeded, & sliced) .
  • 2 tbsps olive oil .
  • parsley, sliced for garnish .
  • salt .
  • 1/4 c fresh basil, sliced .
  • 2 garlic cloves, finely sliced .
  • 1 1/2 c mushrooms, sliced .
  • 1/2 c dry red wine .
  • 1/2 c parmesan cheese, shredded

Directions
  • Step #1 Roasted Plum Tomato Preparation: Cut tomatoes in half & place this in a baking dish skin side up.
  • Step #2 Drizzle with olive oil & salt & pepper to taste.
  • Step #3 Roast at 450 degrees for 20 mins.
  • Step #4 Kitchen Tip: For a smokey taste, place the whole on the burner of a gas stove & roast over open flame, making sure to rotate the tomato until completely chared.
  • Step #5 At this point you can easily remove the skin by rubbing under cold water.
  • Step #6 In the first case, you will be able to remove the skin, once the oven roasted tomatos have cooled.
  • Step #7 Once the skins have been removed, remove seeds with your fingers & course chop & set aside.
  • Step #8 Main Preparation: Heat a medium fry pan over high heat.
  • Step #9 Add olive oil, sliced zucchini, sliced onion, minced garlic, & oregano.
  • Step #10 Saute until tender.
  • Step #11 Salt & pepper to taste.
  • Step #12 Next, add the sliced mushrooms & roasted tomatoes.
  • Step #13 Saute an extra 2 mins.
  • Step #14 Deglaze with dry red wine & cook an extra min.
  • Step #15 Add basil, parmesan cheese, & toss through to mix evenly.
  • Step #16 Serve hot & garnish with sliced parsley.
