Roasted Garlic Gravy Recipe

Ingredients
  • 2 c water or vegetable broth .
  • 1 tbsp canola oil .
  • 1 tsp dried thyme leaves, crumbled .
  • 1 tbsp olive oil .
  • 1 head garlic (medium-to-large-sized) .
  • 6 tbsps whole wheat pastry flour .
  • 1 tsp dried marjoram .
  • 4-6 tsps soy sauce

Directions
  • Step #1 In a small oven-safe dish, place the garlic & pour on about 1 cm.
  • Step #2 of water.
  • Step #3 Put it in the oven or a toaster oven at 350 until the outside is brown & the innermost cloves are soft,25-30 min Check after 20 mins to see if you need to add a little more water- it dries up easily! Allow the roasted garlic to cool.
  • Step #4 Ten slice off the top & squeeze the soft cloves from the skin into a small bowl.
  • Step #5 Mash the garlic with a fork & set aside.
  • Step #6 Toast the flour in a medium-sized pot, over med-heat/flame, stirring constantly, until fragrant but NOT browned.
  • Step #7 Vigorously stir in the the oil, with a wire whisk & cook for a couple of mins on low heat, then the garlic, stirring often.
  • Step #8 Stir or whisk in the liquid, stirring till fairly smooth (There'll probably still be chunks of garlic!) Simmer the gravy for 20 mins, soy sauce & herbs, stirring every once in awhile.
  • Step #9 Serve hot.
