Cuban Black Beans Recipe

Ingredients
  • 1 onion, sliced
  • 1 1/2 tsps ground cumin
  • 1 red bell pepper, sliced
  • 2 minced hot green chile peppers
  • 1 1/2 tsps paprika
  • salt to taste
  • 1 tbsp dried oregano
  • 2 bay leaves
  • ground black pepper to taste
  • 1/4 c balsamic vinegar
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 lb black beans, washed

Directions
  • Step #1 In a large bowl, soak beans in water to cover overnight.
  • Step #2 Rinse beans, & transfer to a large stock pot.
  • Step #3 Add onion, paprika, & chile peppers, cumin, bell peppers, oregano, bay leaves, along with water to cover.
  • Step #4 Bring to a boil, reduce heat, & let simmer for 1 1/2 hrs.
  • Step #5 Test beans for tenderness, & when tender add garlic & balsamic vinegar.
  • Step #6 Salt & pepper to taste.
