Skillet Breakfast' Recipe

Ingredients
  • 3 slices deli ham .
  • 4 eggs .
  • 1 onion, cut up .
  • 2 tbsps margarine .
  • 6 slices Velveeta cheese .
  • 1 c cheddar cheese (any kind you like) .
  • 2 baking potatoes, cut into cubes (peeled if you like)

Directions
  • Step #1 Microwave potatoes with 1 Tablespoon margarine for 3 to 4 mins in a microwave safe bowl.
  • Step #2 Preheat large skillet (that is ovenproof to 350 degrees F).
  • Step #3 Put the other 1 Tablespoon margarine in skillet at medium heat along with potatoes when they come out of the microwave, then add onion.
  • Step #4 Brown potatoes & onion turning often.
  • Step #5 Chop ham into bite size pieces.
  • Step #6 Put ham in skillet with potatoes & onion.
  • Step #7 Mix ham, potatoes & onion & cook this until ham is lightly brown.
  • Step #8 Scramble eggs & pour egg over ham & let cook this until almost done but still runny do not mix! Sprinkle top cheddar cheese over potatoes, onions, ham & egg.
  • Step #9 Put skillet in oven & bake 350 degrees F.
  • Step #10 for about 10 - 15 mins.
  • Step #11 Eggs should look done, put slices of Valvetta cheese over the eggs & let melt in oven 3 - 5 mins.
  • Step #12 Cool for 1 - 2 mins.
  • Step #13 Enjoy! I have also added green or red pepper along with mushrooms to the potatoes & onions.
