Ingredients
2 eggs, beaten .
125 g grated parmesan cheese .
60 g grated gruyere cheese .
90 g butter .
1 pinch nutmeg .
700 ml milk .
225 g semolina
Directions
Step #1 Pour the milk into a pan & bring to the boil.
Step #2 remove this from the heat & add the nutmeg, 25g of the butter & seasoning if desired.
Step #3 Gradually stir the semolina into the milk whisking out any lumps.
Step #4 Return to a low heat & let simmer for 10 mins.
Step #5 Beat half the parmesan into the semolina followed by the eggs until smooth.
Step #6 Spread the semolina on a sheet of baking parchment or oiled tray.
Step #7 Smooth the surface so it is 1/2 inch thick.
Step #8 Allow to cool then chill in the refrigerator for 1 hr.
Step #9 Once chilled use a cookie cutter to cut circles out of the semolina dough.
Step #10 Grease a shallow ovenproof dish & lay any trimmings from the semolina in the bottom.
Step #11 Lay the circles in an overlapping fashion until used up.
Step #12 Melt the remaining butter & pour over the gnocchi.
Step #13 Sprinkle top with the cheeses.
Step #14 Bake for 30 mins at 200C/400F.
