Dad's Venison Chili Recipe

Ingredients
  • 28 oz tomato puree .
  • 1 tsp salt .
  • 3 tbsps chili powder .
  • 1 1/2 lbs ground venison .
  • 1 dash cinnamon .
  • 1 medium sweet onion, sliced .
  • 4 tbsps ground cumin .
  • 1 1/2 c water .
  • 32 oz anasazi beans .
  • fresh ground pepper .
  • 14 1/2 oz sliced tomatoes (chili style) .
  • 1/4 tsp cayenne (or more, to taste) .
  • 1 tbsp cumin seeds .
  • 1 medium yellow bell pepper, sliced .
  • 1/4 tsp paprika .
  • 1 bay leaf, broken in half

Directions
  • Step #1 Brown the venison in a stock pot (I use non-stick).
  • Step #2 Add onion & pepper, saute until slightly soft, about 5-10 mins.
  • Step #3 Add remaining ingredients, cover, & let simmer for 1.
  • Step #4 5 hrs.
  • Step #5 I serve mine with a little sour cream & sliced onion on top, & some crusty bread.
  • Step #6 My husband insists this is sacrilege, & serves his with shredded cheese & crumbled crackers.
  • Step #7 We agree that it is best served with an ice cold beer.
