Bacon Cheeseburger Soup - Low(er) Carb Version Recipe

Ingredients
  • 1 tsp dried parsley flakes .
  • 4 c chicken broth .
  • 6 slices bacon, sliced .
  • 1/2 c sour cream .
  • 1 tsp Frank's red hot sauce .
  • 1/2 tsp pepper .
  • 1 tsp dried basil .
  • 1 lb lean ground beef .
  • 1 tsp salt .
  • 1 1/2 c heavy cream .
  • 8 oz Velveeta cheese (cubed)

Directions
  • Step #1 In a large saucepan, cook beef & sliced bacon until both are browned.
  • Step #2 Add chicken broth, basil, parsley, Franks Red Hot Sauce & bring to a boil.
  • Step #3 Reduce heat - Cover up & let simmer for 20 - 30 mins.
  • Step #4 Add Velveeta, heavy cream, salt & pepper & sour cream & stir until Velveeta melts.
  • Step #5 Serve in bowls & top this with shredded cheese & a tsp of sour cream (if desired).
