Step #1 Melt butter in a skillet.
Step #2 Add chicken, onions, scallions & cook this until tender.
Step #3 Turn heat to low.
Step #4 Add soup, cumin & spinach (make sure spinach is very dry).
Step #5 Remove from heat & stir in the sour cream.
Step #6 Crush chips & place 1/2 in a casserole dish.
Step #7 Add half the chicken/spinach mixture.
Step #8 Add 1 1/2 c of cheese.
Step #9 Repeat all layers ending with cheese.
Step #10 Bake at 350 for 20-25 mins or until cheese is melted & casserole is bubbly.
