Chicken Lime Vegetable Soup Recipe

Ingredients
  • 2 tbsps chicken base .
  • 4 carrots, peeled & sliced .
  • 2 tbsps canola oil .
  • 1 c fresh parsley, sliced .
  • 1 tbsp fresh ground pepper .
  • 3 white onions, sliced .
  • 3 tbsps fresh lime juice (or more to taste) .
  • 5 stalks celery, sliced .
  • 5 roma tomatoes, peeled, seeded, coarsely sliced .
  • 3 tbsps tomato paste .
  • 2 tbsps butter .
  • 3 quarts water .
  • 2 whole chicken breasts, with skin on or 1 small roasting chicken .
  • 1 bunch fresh spinach, thoroughly washed & sliced .
  • 1 c mushrooms, sliced .
  • 2 tbsps worcestershire sauce

Directions
  • Step #1 Melt butter & oil in soup pot & sauté onions, celery & carrots over med-heat/flame for about 10 mins.
  • Step #2 Add mushrooms & continue cooking about 3-5 mins.
  • Step #3 Add water, chicken & chicken base.
  • Step #4 Bring to low boil & cook this until chicken is tender (about 25 mins for breasts; 60 mins for whole chicken).
  • Step #5 Remove chicken from pot & let cool until you can handle.
  • Step #6 Reserve liquid.
  • Step #7 Remove & discard skin & bones.
  • Step #8 Dice or shred chicken.
  • Step #9 Reheat liquid & add chicken, tomato paste, pepper, Worcestershire sauce, tomatoes, spinach, lime juice & parsley.
  • Step #10 Ladle into bowls & top this with crispy tortilla strips.
