Praline Cheesecake Recipe

Ingredients
  • 1/2 c sour cream .
  • Filling .
  • 1/4 c butter, melted .
  • Topping .
  • 1 tsp vanilla extract .
  • 3 eggs, lightly beaten .
  • 25 caramels .
  • 1 c sugar .
  • 3 (8 oz) packages cream cheese, softened .
  • 2 tbsps milk .
  • 1/2 c sliced pecans, toasted .
  • 16 whole vanilla wafers .
  • 1/4 c sugar .
  • 1 1/2 c crushed vanilla wafers

Directions
  • Step #1 In a small bowl, mix the wafer crumbs, sugar & butter.
  • Step #2 Press onto the bottom of a greased 9 inch springform pan.
  • Step #3 Stand whole wafers around edge of pan, pressing lightly into crumbs; set aside.
  • Step #4 In a large mixing bowl, sugar, beat the cream cheese, sour cream & vanilla until smooth.
  • Step #5 Add eggs; beat on lowish speed just until mixd.
  • Step #6 Pour into crust.
  • Step #7 Place pan on a baking sheet.
  • Step #8 Bake at 325F for 55-60 mins or until center is almost set.
  • Step #9 Cool on a wire rack for 10 mins.
  • Step #10 Carefully run a knife around edge of pan to loosen; cool 1 hr longer.
  • Step #11 Refrigerate overnight.
  • Step #12 Place caramels & milk in a microwave-safe bowl.
  • Step #13 Microwave, uncovered, on high for 1 min; stir until smooth.
  • Step #14 Remove sides of springform pan.
  • Step #15 Drizzle caramel mixture over cheesecake; sprinkle with pecans.
  • Step #16 Refrigerate leftovers.
